jan 11: bolivia

Palta Rellena con Camarones

This is more of a summer dish. However, after a season of holiday eating, I wanted something light and easy. This fit the bill. Because this has protein, vegetables, and starch, we had it without sides. A 10-minute full meal! I like a bit more spice and heat in my dishes, especially when they have sweet elements, which this does with the bananas and peas, so if I made it again, I’d add some Tabasco and/or up the paprika.

Palta Rellena con Camarones

  • 16 oz cooked shrimp, peeled fully
  • 4 avocados
  • 1 banana, sliced
  • 1 cup cooked green peas
  • 4 tsp lemon juice
  • 1/2 cup mayonnaise
  • 2 T half & half
  • salt and black pepper
  • 1 pinch paprika
  1. Cut avocados in half and remove pits. Remove some flesh from avocado skins. Reserve skins.
  2. Dice remaining avocado flesh and combine with banana then sprinkle with lemon juice.
  3. Combine mayonnaise, half & half, salt, pepper, and paprika.
  4. Fold in banana mixture, shrimp and peas.
  5. Spoon mixture into avocado skins.
