My plan has a primary mission: expand my family’s horizons. This will not happen if I cook dishes too complicated to repeat, meals that delay dinner, and foods my children will not eat. Thus I followed some basic rules as I selected menus.

  • All meals should be ones I will happily cook again -- no more than ½ hour of active cooking time and no obscure ingredients
  • All meals should be ones my children will happily eat again – potential to repeat outweighs epicurean status
  • While we could have eaten the foods prior, the dishes have to be ones I have not cooked post-having kids
  • Being a child of the 70's, I fall under the meal=three components formula. Therefore, most meals have a protein, starch, and veggie. In some cases, I will augment the meal with fresh veggies, such as cherry tomatoes, carrots, or olives (country dependent)

By the next morning, I will post the recipe, some photos, and any insights about the prep. I will include a map of the country, a picture of the country’s flag, and three fun facts about the country.
