ARUBA: Fish Cooked in Foil

Unsure how common this is in Aruba, because I only found it mentioned in two places, however one of them is an official national website that notes that Fish Cooked in Foil is a classic and traditional Aruban recipe. So, I ran with it. It is a simple and healthy one-dish meal with almost zero cleanup.


Fish Cooked in Foil

1 lb fish fillets or steaks (preferably mahi mahi, red snapper, or swordfish)

1 small onion

1 small leek

2 cloves of garlic

1 yellow pepper

1 red pepper

1 small bunch of broccoli

1 tablespoon chopped fresh basil

1 tablespoon chopped fresh dill

1 teaspoon olive oil

1 lemon

1 tablespoon Pernod or Sambuca

salt and pepper


  1. Preheat oven to 375°. Place two long pieces of foil in a plus-sign shape in a roasting pan.

  2. Chop the onion in half, then slice thinly. Place in a large mixing bowl.

  3. Slice the light green and white parts of the leek and separate the rings. If the leek was not well cleaned, place the rings in a small pan of water and agitate with your fingers, then drain in a colander and rinse a few more times. Add to bowl.

  4. Mince the garlic, seed and strip the peppers, break off the broccoli florets. Add all to the same bowl.

  5. Add in chopped herbs, olive oil, and the juice and zest from half of the lemon. Toss with some salt and pepper and pour vegetable mixture into prepared foil.

  6. Place fish atop the vegetables. Pour the Pernod or Sambuca over the fish. Sprinkle on salt and pepper. Thinly slice remaining half of the lemon and lay over fish.

  7. Seal foil and place the roasting pan into the oven. Cook 25 minutes for filets and 40 min for steaks. Open packet and serve. If fish is not cooked through, open packet and return to oven until done.
