GHANA: Grilled Tilapia with Yam and Plantain Fufu

Grilled Tilapia

1 small bell pepper, any color

1 small spicy pepper (I used Thai), any color

1 clove garlic

1 inch-piece ginger, peeler

1/2 onion

1/2 cup vegetable oil

1/2 tablespoon vinegar

2 lbs tilapia

  1. Blend ingredients in a food processor. Pour over fish. Marinate at least 20 minutes, up to 4 hours.

  2. Grill.

Yam and Plantain Fufu

2 yams or sweet potatoes, peeled and cubed

1 large plantain, peeled and cubed

1 tablespoon butter

  1. Add yams and plantain to a large saucepan. Cover with cold water. Bring to a boil.

  2. When vegetables are fork tender, drain, and transfer to a food processor.

  3. Add butter.

  4. Pulse until fully blended.
