SIDE TRIP: (Naturally GF) Hawaiian Coconut Butter Mochi Bars

OK, not really another country, so yet again breaking the OWW formula. But these take about 5 minutes to make and were snatched up at a recent party. This recipe is adapted from the Kitchn.
(Naturally GF) Hawaiian Coconut Butter Mochi Bars
vegetable or olive oil, for greasing the pan
1 stick unsalted butter
1 pound (1 box) Mochiko flour (you can substitute any sweet or glutinous rice flour, but they vary in consistency, so best to find Mochiko, sold at many larger supermarkets, Asian markets, or online)
2 cups granulated sugar
2 teaspoons baking powder
1/2 teaspoon kosher salt
4 large eggs
2 cups whole or 2% milk
1 tablespoon vanilla extract
1 13.5-ounce can unsweetened coconut milk
¾-1 cup sweetened shredded coconut
a few pinches of course or flaky salt to sprinkle on top (optional)
Preheat oven to 350° F. Grease a metal 9x13 inch pan* with a thin layer of the oil, ensuring all corners are coated.
Melt the butter in the microwave or on the stove. Set aside to cool slightly.
In a large bowl, whisk together the Mochiko, sugar, baking powder, and salt.
Crack the eggs into a medium bowl and whisk until blended. Add in the milk and vanilla. Whisk again.
Pour the egg mixture into the dry mixture, and whisk until fully combined Then, add the coconut milk and whisk again thoroughly. If the cream is separated from the milk in the can, do not worry. Just scrape out all the cream and add it to the mix. It will incorporate when you whisk. Then add in the melted butter and whisk again.
Pour the batter into prepared pan. Gently sprinkle on the coconut flakes. Then, sprinkle on salt, if using.
Carefully move pan into oven, trying to keep it steady so the coconut remains on top. Bake 55-65 minutes, until top is golden brown and a toothpick inserted comes out clean.
Cool fully (at least an hour) before cutting. If cutting knife sticks, rub with neutral oil between cuts.
*Metal pan is best, but if using glass, you might need to add more time to the baking.
