Palta Rellena con Camarones
· 16 oz cooked shrimp, peeled fully
· 4 avocados
· 1 banana, sliced
· 1 cup cooked green peas
· 4 tsp lemon juice
· 1/2 cup mayonnaise
· 2 T half & half
· salt and black pepper
· 1 pinch paprika
Cut avocados in half and remove pits. Remove some flesh from avocado skins. Reserve skins.
Dice remaining avocado flesh and combine with banana then sprinkle with lemon juice.
Combine mayonnaise, half & half, salt, honey, pepper, and paprika.
Fold in banana mixture, shrimp and peas.
Spoon mixture into avocado skins.
