CHAD: Ground Beef and Omelet Sandwich (Guima)

This sandwich was simple and delicious and got 5 stars from every member of my family. While guima might not quite be a full meal, alongside some cassava chips, I am counting it as one. In Chad, cassava is more likely boiled or fried in cubes than served in chip form, but as cassava root is not easily found everywhere, I stuck to the OWW premise of accessible and went with the chips, which are sold nationally. I had not tried cassava chips prior, but the Goya ones I bought were quite good. They are like super crispy potato chips.
Ground Beef and Omelet Sandwich (Guima)
1 lb ground beef
1 medium yellow onion
2 cloves garlic
1 teaspoon freshly grated ginger
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
1 teaspoon + 2 large pinches table salt
2 tablespoons vegetable or canola oil
4 eggs
2 tablespoons butter
1 long baguette
4 tablespoons mayonaise
Heat the oil in a ~10"-skillet over medium heat. Dice the onion, add to the skillet, and cook until soft and lightly browned. Mince the garlic. Add the garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant. Add the cumin, coriander, and paprika to the skillet, and cook 1 additional minute, until fragrant.
Add the ground beef and 1 teaspoon of salt to the skillet. Use a wooden spoon to break the meat apart so it doesn't clump. Cook until the meat is browned throughout. Use a slotted spoon to remove it to a bowl.
In a small bowl, beat the two eggs and one punch of salt.
Wipe out the skillet and add 1 tablespoon of butter to it. Heat over low heat. When butter is fully melted, add the eggs and twirl the pan to coat the bottom evenly. After bottom sets, place half of the meat in a stripe down the center of the skillet. Keep over low heat until eggs cook through. Fold both sides of the eggs up and around the meat.
Cut the baguette lengthwise, to open like a sandwich, then cut it in half. Slide the egg mixture onto one half, close, and cut in half again, to make two sandwiches.
Repeat with remaining two eggs, pinch salt, tablespoon of butter, and half of meat mixture.
Serve with cassava chips.
