NARU: Coconut Fish and Boiled Sweet Potato

Whenever asked what he wants for dinner, my husband replies, "Salad with protein." Glad I was able oblige him with this one. A super simple, stunning, and delicious dinner that took less than 10 minutes to make.

Smoked Fish Salad (Salad Pwason Fimen)

8 oz smoked fish, such as swordfish, marlin, or tuna (I used TJ salmon, because it was what I found)

1 red pepper

1 medium tomato, such as a Roma

1 under-ripe mango

½ red onion

10 oz lettuce or your choice

1 cup shredded cabbage, optional

1 lime

2 tablespoons olive oil

Salt and pepper to taste

  1. Break the smoked fish into bite-size pieces or, if it's firmer, use a knife to julienne it.

  2. Julienne the pepper, tomato, mango, and onion.

  3. Place the lettuce in a large bowl. Add the cabbage, if using, julienned vegetables, and fish. Squeeze the lime over top. Drizzle with the olive oil. Toss and season to taste.

FUN FACTS:

  • The capital, Victoria, is one of the world's smallest capitals; it has only two traffic lights.

  • In the 17th and 18th centuries, pirates liked to hide out in the Seychelles. There is treasure that was reportedly buried there that has not been found to this day.

  • Bird Island in the Seychelles is home to "Esmeralda," the heaviest living wild tortoise on Earth, who weighs more than over 670 lbs and is believed to be about 170 years old.
